The recipe is perfect, but most of the time I don’t stick to the waiting times, because I don’t have the time to do that. If you are more organised than me and can stick to the waiting times, I am sure it will slightly improve the result. It may have to do with gluten development over time, making the end result more springy and elastic. But I am happy with my short cut … when need be and think it is just as delicious.

Mix the Dough:

In a large bowl, combine the flour and salt. Gradually add water while mixing with your hand or a spoon.

Knead until the dough is smooth, elastic, and soft (about 5–7 minutes).

Cover with a damp cloth and let it rest for 15–30 minutes.

Divide and Roll:

Divide the dough into 4 equal balls.

Lightly flour a clean surface and roll each ball into a thin, round circle (about 6–8 inches in diameter).

Cook the Chapati:

Heat a flat skillet or tawa over medium-high heat until hot.

Place one chapati on the skillet. Cook until bubbles form (about 30–45 seconds), then flip.

Cook the second side until brown spots appear, then flip once more briefly. The chapati may puff up slightly — that’s perfect!

Remove from the skillet and keep warm in a cloth.

Optionally, brush lightly with ghee or oil.
